As the holidays come to a close and we embark upon a brand new year, I find myself reevaluating my nutritional regime.  Right before Christmas I successfully completed a three-day juice cleanse, but immediately followed it with two weeks of indulgence.  Instead of repeating the extreme abstinence from solids, I’ve resolved to start eating better generally.

Completely removing comfort food is overly oppressive, so I challenged myself to create something both nutritious and delicious.  Greek food immediately came to mind.  Greek cuisine is characterized by fresh flavors and healthy ingredients, but still manages to inspire enough zing to entertain the palate.

I love a classic Horiataki (colloquially known as Greek salad), but its sparse components leave me wanting something more substantial in cold winter months.  The ultimate comfort foods always involve melted cheese, yet melted cheese Greek salad sounds revolting.  But a Greek salad quesadilla sounds delectable!

Combining the salad’s rustic ingredients with a sprinkle of mozzarella, chiffonade spinach, and a whole wheat tortilla, I created a satisfying yet health-conscious treat.  To add extra decadence, I served the quesadilla with tzatziki in lieu of salsa.  This effortless meal will be on regular rotation until summer!  xx tt
